In 2011, Buck’s Pizza founder Lance Benton, affectionately known as “Mr. B,” began developing his own deep-dish pizza recipe. He spent months experimenting with different flours, ingredient combinations, baking temperatures, and pans, often working late at night in the DuBois restaurant after closing.
The result was a unique Buck’s Pizza Deep Dish recipe, prepared using authentic Detroit-style blue steel pans, a style of pan originally used in the automotive industry. Every detail, from the dough and ingredients to the pans and baking process, was carefully developed to create the perfect deep-dish experience.
